不同产地酱油中元素含量特征及其产地判别
Study on the characteristics of elements content and the discrimination of the origin of soy sauce in different producing areas

摘要: 采用电感耦合等离子体质谱(ICP-MS)直接测定了中国广东、中国山东和日本的3个产地51件酱油样品中的21种无机元素含量,建立酱油产地溯源模型,阐明产地特征元素.利用主成分分析法(PCA)、偏最小二乘法判别分析法(PLS-DA)建立产地识别模型,利用Fisher线性判别分析(FLD)考察建模效果.PCA模型可以将日本的酱油样品与中国广东及中国山东的酱油样品实现很好的区分;PLS-DA可以实现3个地区的样品的分离;FLD对3个产地的正确判别率分别为100%、85.7%和90.9%.利用PCA、PLS-DA两种多元统计分析方法对3个地区酱油样品的无机元素进行分析,筛选出Cs、Sr、Sb、Co、Ca、Pb、Ba、Ni、Se等9个特征元素,实现了不同产地酱油的溯源.

Abstract: Twenty one elements in 51 soy sauce samples from Guangdong of China, Shandong of China and Japan were analyzed directly by ICP-MS to trace their origin and find out the elements from above 3 areas characteristic. Principal component analysis (PCA) and partial least squares discrimination analysis (PLS-DA) were used to analyze the distribution of the elements in the soy sauce samples and also to detect the discriminatory constituents. Results: The samples from Japan were isolated from Guangdong and Shandong in PCA score plot. The samples from the 3 origins could be separated in PLS-DA score plot. By cross validation, FLD correctly classified 100%, 85.7% and 90.9% of soy sauce samples from Guangdong of China, Shandong of China and Japan respectively. Conclusion: Cs,Sr,Sb,Co,Ca,Pb,Ba,Ni,Se were the characteristic elements for determining the geographical origin of soy sauce by multivariate data analysis such as PCA and PLS-DA. -
