三种典型异味物质的愉悦度特征
Hedonic tone of three typical odorants

摘要: 愉悦度是评价异味物质的气味特征及进行气味分类的重要指标.本研究以苯乙烯、柠檬烯和乙酸丁酯为研究对象,对其愉悦度进行了测量,分析了不同异味类型物质的愉悦度特征及其与臭气浓度之间的关系.结果显示,苯乙烯与乙酸丁酯的气味均属厌恶范畴,但在相同臭气浓度下,苯乙烯令人厌恶的程度远高于乙酸丁酯.柠檬烯在一定浓度范围内,气味属愉悦范畴,但当浓度指数达到3.1时,气味由愉悦转变为厌恶.建立了三种物质的愉悦度特征曲线,并对愉悦度与臭气浓度的关系进行拟合,模型显示愉悦度与臭气浓度之间存在一元二次非线性关系.Abstract: Hedonic tone is an important index which can truly evaluate the odor characteristics and classify the odor. Styrene,limonene and butyl acetate were selected as typical odorants with different characters to investigate the relationship between odor concentration and hedonic tone.The results show that styrene and butyl acetate both belonged to the category of unpleasant adorants, but the aversion of styrene was much stronger than butyl acetate at the same concentration. Limonene was pleasant in a certain concentration range, but its smell changed to being unpleasant when the odor index exceed 3.1.Behavior curves of the threetypical odorants were plotted according to the results of the measurements. Moreover, relationship models were established based on multivariate logistic regression analysis.The models show a quadratic nonlinear relationship between the hedonic tone and the odor concentration.
